Cinnamon Raisin Biscuits



I have a goal this new year to start making easy, grab-n-go breakfasts for weekday mornings. It's crazy around here in the mornings. I'm now a substitute teacher so it varies what time I need to report to work, which messes up schedules, which causes rushing around, which leads to me grabbing either a Pop tart and throwing it in my purse, or worse. Nothing at all! Ok, well except for coffee, but that's a given. Totally unhealthy, I know but I also know I'm not alone!

The recipe as is has 155 calories per biscuit which is not bad at all compared to your average cinnamon roll (or Pop tart)! I use my own DIY Baking Mix for this, but you could use Bisquick to save time. These are great with a little butter alongside a cup of coffee. Perfect, easy morning. :)



Cinnamon Raisin Biscuits
from Betty Crocker

2 cups DIY Baking Mix (or Bisquick)
1/2 cup milk
1/3 cup sugar
1/2 cup raisins
1 teaspoon cinnamon


Add all ingredients into a medium mixing bowl.



Stir until just combined, batter will be thick and lumpy. Drop spoonfuls on greased cookie sheet (you should get about 9 biscuits). Sprinkle with additional sugar, if desired. Bake at 425 degrees for 10-12 minutes.



And just like that you have a basket full of steamy, warm, cinnamon-y biscuits. Doesn't get any easier than that!

  3. Shoot! I have everything on hand except raisins. I got a little carried away with the oatmeal raisin cookies this holiday and haven't restocked. I think I'll try it without and just have cinnamon biscuits... maybe with a tiny bit of oatmeal. Your recipes are always spot on with my family's palate! Thanks!

    1. Carrie, if you omit the raisins I would increase the sugar, maybe to 1/2 cup instead. I'm not sure they would be sweet enough without the raisins! I hope that helps. Have a great weekend! :)
