Salsa Meatloaf Bites
So, I have a husband who doesn't care for meatloaf. I've attempted it various ways and this is only one of two ways he'll eat it. I really shouldn't complain, he pretty much loves everything else I make. Can't win them all, right? :)
These meatloaf bites are so cute! At three to four bites per meatloaf, these are PERFECT for kids. Silas actually saw me editing the photos for this post and asked me where they were because he wanted one! Cutie pie.
Salsa Meatloaf Bites
makes about 12 mini meatloaves
1lb lean ground beef
2 tablespoons dried, minced onion
1 egg
16 buttery crackers (I used Club crackers)
2 cups shredded cheddar cheese, divided
1 cup chunky salsa, divided
Place crackers in a ziploc bag, seal, and crush. This is a great job to get the kids involved in the kitchen! Meanwhile, place ground beef, onion, egg, 1 cup shredded cheese, and 1/2 cup salsa in large mixing bowl. Add crushed cracker crumbs and mix to thoroughly combine ingredients (hands work best). Press meat mixture evenly among 12 muffin cups. Bake at 400 degrees for about 25 minutes, test to be sure meat is no longer pink and reaches internal temperature of 160 degrees or above. Top each meatloaf with a spoonful of remaining salsa and sprinkling of cheese. Bake an additional 5 minutes until cheese is melted.
I served this with a side salad and some rice with corn. Yum!

ReplyDeleteI made a version of this and wrote about it here. Did anyone else have a problem with the meat not browning because the fat had no where to go?
ReplyDeleteThey were still really tasty, but next time I will just shape into balls and bake on a cookie sheet so the fat has some place to drain.
