Soup Week: Alphabet Soup



We're on day 4 of soup week and I hope you're having a blast with me! So far I've shared Simple Spinach Tortellini Soup, Crockpot Loaded Baked Potato Soup, and Tomato Basil Parmesan Soup. Let's see what the soup of the day is today...




Alphabet Soup! And SOOO much better than the can. Not only is this soup super fun to serve to your kids, it's really delicious! I was able to find alphabet pasta (San Giorgio brand) at a larger Giant grocery store, but you can substitute orzo if needed. Silas had a great time asking me what all the letters were and trying to find all the "s" pastas in his bowl. We ended the meal by reading Dr. Seuss's ABC: An Amazing Alphabet Book. What a fun afternoon, you have to try it with your family!


Alphabet Soup

1lb ground beef
3 cups beef broth
1 carrot, peeled and diced
3 teaspoons (or 3 cloves) minced garlic
2 tablespoons dried, minced onion
1 teaspoon Italian seasoning
15oz can Great Northern beans, drained
14.5 oz can diced tomatoes, undrained
1 cup alphabet pasta, uncooked


Brown ground beef in stock pot, drain, and return to pot. Add broth, carrot, garlic, onion, Italian seasoning, beans, and tomatoes. Bring to a boil, then reduce heat and simmer for 40 minutes. Stir in 1 cup alphabet pasta, cook an additional 10 minutes or until pasta is tender.



The little pasta ABCs tend to soak up the extra liquid, so if you're serving leftovers you might add additional beef broth as needed.
