Crockpot Teriyaki Chicken Sandwiches
You gotta love recipes that come together originally as a mistake! I had planned on making my Chicken with Pineapple Sauce for dinner a while ago, but ... I was lazy. I decided I was going to try and just dump it in the Crock-Pot
and see what happened. While the flavor was AMAZING, the chicken completely fell apart. I had some great rolls to use up and these sandwiches were born! This is definitely one of those easy, dump and go crockpot recipes.
Crockpot Teriyaki Chicken Sandwiches
2 large (or 3 small) boneless, skinless chicken breasts
2 tablespoons brown sugar
8 oz crushed pineapple in juice
1/4 cup soy sauce
1/4 teaspoon garlic powder
1/4 teaspoon ground ginger
1/4 cup teriyaki sauce (as needed)
4 crusty rolls
4 slices colby jack cheese
Spray bottom and sides of Crock-Pot
with cooking spray and place chicken inside. In small bowl, mix together brown sugar, crushed pineapple, soy sauce, garlic powder, and ginger. Pour over chicken. Cook on high 3 hours or low 6 hours. When done, remove chicken and shred with two forks, then return to Crock-Pot
and mix well to incorporate sauce. Add teriyaki sauce as desired (ours was just fine without). Serve on rolls with colby jack cheese.
Easy and delish!
