Crockpot Lemon Garlic Chicken & Potatoes

I'm a one-pot dinner kinda girl, but you knew that already right? :) When I spotted a recipe for a Lemon Garlic Chicken dish in my Fix-It And Forget-It Cookbook, it sounded like a real winner. Well after a good bit of "tweaking" on my part. Sometimes my tweaking works out great and sometimes... well... not so much. This Lemon Garlic Chicken? TOTALLY worked!! The absolute best part of this dinner (besides the AWESOME lemon garlic flavor) is that you don't even need to think of a side, the potatoes cook right along with the chicken. Score one for you, mama! 


Crockpot Lemon Garlic Chicken & Potatoes
adapted from Fix-It And Forget-It Cookbook

1 teaspoon oregano
1/2 teaspoon seasoned salt
1/4 teaspoon fresh ground pepper
4 boneless skinless chicken breasts (I used 3, but they were HUGE)
2/3 cup chicken broth
4 tablespoons fresh lemon juice (about 2 lemons)
4 garlic cloves, minced
4 small potatoes, quartered


Place quartered potatoes in bottom of Crock-Pot. Top potatoes with chicken breasts. Rub oregano, seasoned salt, pepper, and garlic into chicken. Pour broth and lemon juice over chicken and potatoes. 



Cook on low 6 hours or on high 3 hours. 



After plating chicken and potatoes, spoon extra garlic-lemon broth over both. The flavor of the broth is outstanding!
