Crazy Cooking Challenge - Mini Oreo Cheesecakes
My mom is known in our family for her cheesecake. I remember her breaking out the old mixer that was half broken, turning the bowl to get the cream cheese blended because the mixer no longer turned. I think her recipe calls for 4 or 5 bricks of cream cheese, she would basically break her arm doing this! Her cheesecake is so rich and good, I just never was motivated to make it because it seemed like a lot of work.
Granted, we both have KitchenAids now, I'm sure it would be as simple as dumping in the cream cheese and turning it on. Still, I think I'll leave the traditional cheesecake for her. These Mini Oreo Cheesecakes? So different and SO EASY! The original version I found on Six Sister's Stuff, I find so many amazing recipes there. The recipe below makes 12 mini cheesecakes, but you can go to their recipe if you'd like to make 24. These would be PERFECT for a party if you really want to impress. :)
Mini Oreo Cheesecakes
adapted from Six Sister's Stuff
12 oz (1 1/2 bricks) cream cheese, softened
1/2 cup sugar
1/2 tsp vanilla
2 eggs
12 whole Oreo cookies
6 crushed Oreo cookies
whipped cream
chocolate syrup
Line 12 muffin cups with paper liners. Place a whole Oreo cookie in the bottom of each cup. Beat cream cheese, sugar, and vanilla in a bowl until creamy. Beat in eggs one at a time. Gently fold in crushed Oreos (I put them in a ziploc and rolled a can over them). Scoop cheesecake filling over each over cookie. Bake at 350 for 15 - 20 minutes or until center is set.
Let cool completely on counter and then refrigerate before serving. Top with some whipped cream and chocolate syrup.
Gotta love the inside shot. SOOO good!!
