Friday Favorites - Mexican Meals

In honor of Cinco de Mayo, I figured this week's edition of Friday Favorites would feature the Mexican dishes I have pinned to try. We usually have 1-2 dinners per week with this theme, we LOVE it! Years ago when we lived in Philadelphia, we ate at Taco Bell more times than I like to admit. Moving out here to Amish Country, PA snapped us out of that real quick as the nearest Taco Bell is about 30 minutes away. I'm happy to say I was able to recreate our favorite Taco Bell menu item, Grilled Stuffed Burritos. You have to try them! Ok, on to the picks of the week:

  1. Love the enchilada rice and others on this list! Makes me wish my husband enjoyed Mexican eats more.... I'll have to tuck these away for the next time he travels :)

  2. You never really realize how easy it is to make Taco Bell recipes until you just try one. I've made crunchwraps, copycat quesadillas, and mexican pizzas. They are all pretty easy :)
