This month's Crazy Cooking Challenge was so much fun! We were asked to find a grilled cheese recipe, I had no idea there were so many variations on the regular old grilled cheese. During the week I plan dinners on the nights that Paul is home from work/school. When it's just me and Silas, I'll plan something small or we'll have leftovers. Macaroni and cheese, chicken nuggets, Tuna Melt Quesadillas, and grilled cheese sandwiches are regulars around here on Friday nights. I loved the thought of changing up our normal go-to grilled cheese!
This was such a fun twist and was really quick and easy. We enjoyed these "picnic style" in our living room with a big bowl of popcorn and a showing of Wall-E. :)
Pizza Grilled Cheese
adapted from Forkful of Comfort
8 slices french bread
1 cup shredded mozzarella cheese (sliced would be fine also)
pepperoni (or any other pizza toppings)
1/4 cup pizza sauce
Spread margarine over one side of each bread slice. Place slices butter-side down in a greased skillet.
Sprinkle a generous amount of mozzarella and pepperoni (I went easy on the pepperoni because of my 3 year old). Sprinkle some garlic powder and oregano over the pepperoni. Top sandwiches with remaining bread slices, butter side up. Heat over medium heat until cheese begins to melt. Carefully flip sandwiches over and continue to cook until all the cheese is melted and the bread is golden-brown. Cut sandwiches and serve with pizza sauce to dip. So yummy!
