I hope you all had a wonderful Easter! It was absolutely beautiful here in Amish Country, PA. Still a little chilly, but no coats needed. We visited a local farm for their annual Easter Egg Hunt on Saturday and then had the family over for grilled hotdogs and sausages. Of course on Sunday we had an AWESOME service at church and then had dinner at my mom and dad's house. Of course I was able to spend some *quality* time with my 2 week old nephew Elliott (as in I wouldn't let anyone else hold him). Such an awesome way to celebrate our new life in Christ!
Big dinners mean lots of leftovers, yay! I have some carry over meals from last week on the plan and we'll be feasting on leftover baked ziti and egg salad sandwiches for lunch throughout the week. Here's the dinner plan:
Grilled Stuffed Burritos
Grilled Shrimp Skewers and Grilled Garlic & Herb Corn
Roasted Tomato Soup with Grilled Cheese Croutons
Ham & Cheese Stromboli
Tuna Melt Quesadillas
Grilled Hotdogs and Roasted Potatoes & Cheese
Slow Cooker Orange Chicken

I have a new nephew who will be 2 weeks on Thursday. His name is Dexter :) I would hold all day if I could!
