
It's time once again for the Crazy Cooking Challenge! This month's challenge was blueberry muffins. While I LOVE baked goods of any kind, I'm not a big fan of blueberries. Neither is Paul. I figured if we really didn't like them, I could always give them to my dad. He'll eat pretty much anything in muffin form! While I was mixing the batter, Silas came up to me and squealed, "Mommy, can I PUHLEEEASE have a grape-berry??" (He was constantly calling grapes 'cranberries' and so far we've at least got him saying a morph of the two words lol) So I gave him one and to my surprise, he loved it. So of course I had to pop one in my mouth. DELICIOUS! They were the best blueberries I'd ever had! And this easy-peasy recipe was perfect for them. A perfect semi-homemade recipe as well. :)
Cake Mix Blueberry Muffins
from Six Sister's Stuff
1 box yellow cake mix (ignore the ingredients & directions on the box)
1-2 cups blueberries
1 teaspoon baking powder
2 tablespoons flour
2/3 cup milk
1/3 cup vegetable oil
3 large eggs, slightly beaten
In a medium bowl, mix together cake mix, baking powder, and flour. Stir in milk, oil, and eggs until well incorporated. Carefully mix in blueberries (reserve a small handful for the tops of the muffins). Fill greased or lined muffin cups 2/3 full with batter. These rise significantly, so you could get away with 1/2 full to stretch the recipe further. Sprinkle the tops with 2 or 3 additional blueberries. Bake at 375 for 15 minutes. I was able to get 16 muffins from this recipe.

I'm going to have to try a muffin using cake mix, these sound so good, and also love the "grape-berry" my youngest used to love "pup-cakes" Now anytime we have cupcakes, we call them pupcakes just for her.
