Crazy Cooking Challenge: Slow Cooker Fresh Tomato Sauce

This month's Crazy Cooking Challenge was to select and prepare a spaghetti meal complete with classic red sauce. I was beyond thrilled when this March challenge was announced! I've been stuck in a rut buying jarred spaghetti sauce. My mom and grandmom make a killer spaghetti sauce, but it is TIME consuming. The time had come to find my own, simple sauce to make -- and boy did I!
This recipe uses FRESH TOMATOES folks, not the diced kind you buy in a can. And you know what? It did take more time than popping open a jar and dumping it into a pot, but it was MORE than worth it. This sauce was delicious and made the whole house smell amazing. Next time we decided to add some fresh sliced mushrooms into the mix. YUM!

Slow Cooker Fresh Tomato Sauce

4 large tomatoes, diced
6 cloves garlic, chopped
1/4 cup tomato paste
1 tsp salt
1 tsp sugar
1 tsp dried basil
1 tsp dried oregano
salt & pepper
2 cups shredded mozzarella cheese
1 lb ground beef (optional)

In the bottom of a slow cooker, stir together tomatoes, garlic, tomato paste, salt, sugar, basil, oregano, and salt & pepper. Cook on low 6-8 hours. Remove lid and mash tomatoes with the back of a fork. Stir in ground beef. Serve over cooked spaghetti and topped with shredded mozzarella cheese.

    1. You got it, Leah. It would be on high for 3-4 hours instead. Most slow cooker recipes allow you to do this, with the exception of desserts usually.

  11. I hate to sound silly but did you cook the ground beef first??

    1. Not silly at all! Brown the ground beef in skillet and drain before adding it with the rest of the ingredients in the crock pot. Hope that helps!
