It's time once again for the Crazy Cooking Challenge! This month's theme was chocolate cake, in honor of Valentine's Day I'm sure. My dad is a HUGE chocolate cake fan. I decided to make this chocolate cake for us two, while the rest of the family enjoyed a peanut butter cake to celebrate my brother's birthday. I think I definitely take after my dad, there just is no substitute for good old, decadent, gooey,
chocolate cake.
I needed it to be semi homemade in some way you know ;) and when I came across this recipe from Let's Dish, I knew I had found "the one." You guessed it, this recipe starts with none other than good old chocolate cake mix! Believe me, you would absolutely never know it because of the rich chocolate flavor.
Chocolate Fudge Bundt Cake
1 pkg chocolate cake mix
1 3.4 oz pkg instant chocolate pudding mix
2 cups sour cream
3 eggs
1/3 cup oil
1/2 cup water
1 pkg semi sweet chocolate chips
Optional: chocolate frosting/fudge sauce
Beat cake mix, pudding mix, sour cream, eggs, oil, and water with an electric mixer until well combined. Batter will be very thick. Gently stir in semi sweet chocolate chips. Spread batter into a well greased bundt pan and bake at 350 for 50 minutes - 1 hour (mine was perfect at 55 minutes). Remove cake from pan and allow to cool about 5 minutes on a wire rack. While my cake was cooling, I decided that I did want to drizzle a little something over the top. So I popped some can frosting (remove foil seal) into the microwave and cooked for 15 second intervals until the frosting was able to pour freely from a spoon. Drizzle cake with warmed frosting and allow cake to rest/cool for about 45 minutes (frosting will harden back up).

This is so pretty! I love how the frosting falls over the sides. I used the same recipe for my cake, and I have seen it at least 3 other times in this challenge. I think it is the best ever!
ReplyDeleteI agree with you most of the time no one would ever know if the cake is scratch or box. To really stump them, I sub buttermilk for the water, which is what I think the sour cream accomplishes in your cake! Brilliant! (Visiting from the CCC #60)
