I had this recipe on my list of things to try for weeks. I'm not sure why it took me so long to finally make it, I think I thought it was a lot more involved than it really is. Actually, this recipe was really easy and super tasty! Apparently it freezes well, though there were no leftovers in this house.
Serve it with some crusty bread and it's the perfect meal for a chilly day!
Cheesy Potato Soup
adapted from Once A Month Mom
4 tablespoons butter
1 large onion, chopped
4 large potatoes, peeled and cut into chunks
2 bay leaves
2 1/2 cups chicken stock
1 cup shredded cheddar cheese
salt/pepper to taste
Melt butter in pot and saute onion until transluscent. Add potatoes, bay leaves, minced onion, and chicken stock and bring to a boil.
Reduce heat and simmer about 15 minutes until potatoes are soft. Remove bay leaves. Mash potatoes in pot with potato masher or the back of a fork (I used the fork method and left some chunks here and there, just the way I like it).
Stir in cheese until melted. Serve immediately.
