Countdown to 2012: Best Crockpot Recipes

This week I'm joining Finding Joy In My Kitchen and highlighting the best recipes of 2011. Check out previous posts Best Main Dish Recipes and Best Breakfast Recipes. Today we're focusing on crock pot recipes. Have I mentioned I L.O.V.E. my crock pot?! I plan at least one crock pot meal per week, usually on Sundays. When we come home from church the house smells amazing and lunch is ready! Here are the best ones I've found this year:

Chicken Spinach Soup



I'm totally into soup mode now that the weather is getting BITTER cold here at night in Amish Country, PA. I'm looking forward to Christmas and snow days! This was the perfect soup to kick off our winter mood and quite healthy, too. Silas absolutely loved it and so did we. It's a great soup to have the ingredients on hand to just throw together and let it cook and smell up the house all day!

Chicken Spinach Soup

2 chicken breasts
1 tablespoon dried minced onion
2 cups chicken broth
3 garlic cloves, minced
1 cup water
1 teaspoon basil
1 can stewed tomatoes
1 can great white northern beans
1/2 package frozen spinach

Dump all ingredients above in slow cooker on low for 7 hours or high 3 hours. Take chicken out and shred. Return chicken to slow cooker and continue cooking for an additional hour. Serve with some good crusty bread. YUM!

The 2nd week of December means that the semester is OVER! Yaay! :) Paul is home much more and less stressed out and that means more meals to plan. Here's what I'm cooking this week:
 
Lunches & Snacks- mushroom omelettes, spinach salad, PB&J, yogurt, salsa & chips, popcorn
 
Treats- Christmas cookies!! I need to start on these for family gifts. I have some great ones planned that I'll be posting so stay tuned and pray that I gain self control LOL!

Wednesday- Veggie Nuggets & Sweet Potato Fries
 
Thursday- Breakfast Sausage Pasta (just pasta, spaghetti sauce, and cooked chopped breakfast sausage)

Saturday- Pumpkin Pie French Toast, Tuna Melts

Crazy Cooking Challenge: Pumpkin Pie Fudge



I'm SOOO excited to be participating in the Crazy Cooking Challenge again this month! I've had so much fun trying out things I normally wouldn't have made. This month's challenge was fudge -- YUMMO! Once upon a time when I was a teenage I had found a recipe for easy fudge and it turned out nothing like the original recipe! Needless to say I haven't tried it again until now. This was so good! The original recipe says it should be called Pumpkin Pie Candy and I totally agree.

Pumpkin Pie Fudge

1 1/2 cups sugar
1/2 cup pumpkin
3/4 cup evaporated milk
2 tablespoons butter
1 1/2 teaspoons pumpkin pie spice
1/4 teaspoon salt
1 package white chocolate chips
2 cups mini marshmallows
1 teaspoon vanilla

Coat an 8x8 baking pan generously with cooking spray (I lined mine in plastic wrap for easy removal). Combine sugar, pumpkin, evaporated milk, butter, pumpkin pie spice, and salt in a saucepan over medium heat. Bring mixture to a boil, stirring constantly. Continue boiling and stirring for 12 minutes. Remove from heat and stir in marshmallows, white chips, and vanilla until melted. Pour into pan and refridgerate until set. Makes a great gift!
