Pumpkin Pie French Toast




These were super yummy, I should have made them a long time ago! I've had this recipe bookmarked for a while I just never got around to it. Silas and I usually eat breakfast for dinner on Fridays when Paul is at work (he's a weirdo and only likes breakfast at breakfast). The past few weeks have been really busy on Fridays so I've been just making sandwiches or something easy. I will for sure be making these regularly, especially since I majorly stocked up on Libby's pumpkin for $1!!



Pumpkin Pie French Toast

2 eggs
1/4 cup milk
1/4 cup pumpkin
1 teaspoon pumpkin pie spice
1/2 teaspoon cinnamon
2 tablespoons brown sugar
8 slices bread (I used a nice, hearty wheat bread)

Beat eggs and milk in a shallow bowl. Stir in pumpkin, brown sugar, and spices until well combined. Make sure there are no clumps of pumpkin left.


Spray griddle with non stick spray. Dip bread into egg mixture, turning to coat each side, and allowing excess to drip off back into bowl. Cook over medium-low heat, about 2 minutes for each side of bread. Serve with syrup.


 
It will make your entire house in the fall mood - guaranteed!!

Menu Plan Monday 11/21

Well, this week is going to be a little light given Thanksgiving and Black Friday. We'll be going to my Mom's for Thanksgiving and she's asked me to bring the corn, mixed veggies, and pumpkin pie. I also have everyone over for Thanksgiving breakfast to watch the parade. Here's the plan:
 
Monday- Tortellini
 
 
Wednesday- Egg Salad sammies
 
 
Friday- Leftovers/Out (while shopping!!)
 
Saturday- Leftovers

Slow Cooker Sticky Chicken



This recipe was very yummy, something all three of us enjoyed. I've really been getting my money's worth outta this Crock Pot, I tell you! I love that most of the cooking is done in the slow cooker and then you broil it for a few minutes to make it crispy. Genius!


Slow Cooker Sticky Chicken


3 lbs chicken thighs (you can use any kind of chicken you want, I bought the cheapest that week)
3/4 cup brown sugar, divided
1/4 cup soy sauce, divided
1 teaspoon ground ginger
4 cloves garlic, minced
1/2 teaspoon cayenne (omitted, shh don't tell my husband :)
1/4 cup tomato paste
1/4 cup water


Combine 1/4 cup brown sugar, 2 tablespoons soy sauce, ginger, and garlic in the slow cooker. Add chicken and stir to coat evenly.


Cook chicken for 4 hours on low or until done. Meanwhile, combine remaining 1/2 cup brown sugar, 2 tablespoons soy sauce, water, and tomato paste. When chicken is done, place on a lined cookie sheet and brush all sides with sauce.


Pour extra sauce over chicken (don't waste one bit, trust me!). Broil for about 5 minutes or until desired crispness. Serve with white rice.

I still can't believe Thanksgiving is in two weeks! This week I'll be finding a recipe for corn to bring to the dinner, I'll also be making the green bean casserole. I love Thanksgiving! Amidst all the busy stuff this week, here's what I plan on making:

Prairie Pork Chops



Yes there are pork chops under there!! I didn't realize I had bought thin cut pork chops until I got home. It didn't make a bit of difference, this recipe was so tasty and flavorful. Hands down, I will be making this again. I love that I can have all the ingredients on hand waiting for a great deal on pork chops.


Prairie Pork Chops

8 pork chops
1/2 cup spicy mustard
1/2 cup packed brown sugar
1 box Stove Top stuffing
1 can corn, drained
1 cup water


Spray 9x13 baking dish with non stick spray. In a shallow bowl, mix brown sugar and mustard. One by one, coat each side of pork chops with mustard mixture. Top chops with any remaining mixture (you'll want every last bit of this stuff, trust me!) In a medium sized bowl, mix stuffing, corn, and water. Top pork chops with stuffing mixture. Bake at 350 for 40-45 minutes.

Crazy Cooking Challenge: Roasted Garlic and Parmesan Mashed Potatoes

I absolutely love participating in the Crazy Cooking Challenge hosted over at Mom's Crazy Cooking. This month's challenge was Mashed Potatoes and I was so excited! I grew up eating instant and I still to this day love instant mashed lol. They're just so easy to whip up on a week night and they taste great, as long as you go for a better brand (Idaho or Betty Crocker get my vote).


I needed to find a real mashed potato recipe though to serve along with the turkey dinner I made for the fam on Halloween. This recipe was great! I have never roasted garlic before, it was seriously easy people. You have to try, it brings such a different sweet garlic flavor.


Roasted Garlic & Parmesan Mashed Potatoes


6 large potatoes
1 head of garlic
olive oil
kosher salt
1/4 cup sour cream
1/4 cup milk
1/2 cup grated parmesan cheese


Preheat oven to 400 and cut about 1/3 off the top of the garlic head. Drizzle some olive oil over the garlic and sprinkle kosher salt.



Top with another drizzle of olive oil. Wrap garlic in foil and place directly on oven rack for 30 minutes.



Meanwhile, rinse potatoes and place in pot; cover with water. Bring water to a boil and cook for about 30 minutes. Stick a fork in the largest potato to see if it's done (should slide easily into potato, if not -- give them another 10 minutes or so). Drain potatoes and let cool slightly. Peel potatoes (MUCH easier to peel potatoes AFTER they are cooked) and cut into chunks. Add the roasted garlic to the potatoes by popping them out of the cloves, so fun!





Add sour cream, milk, and parm, beating until well combined. Add milk a splash at a time until desired creaminess.



Pour potatoes into a 2 quart baking dish and bake at 350 for 15 minutes or until heated through.


We thought these were great and definitely not your typical garlic mashed potatoes. This batch made enough for everyone to have some along with their turkey dinner, and we still had leftovers for a few days.

Chicken Spinach Soup from Finding Joy In My Kitchen
 
 
Ahh... finally a week that's a bit less hectic. Last week, I only had one thing on the menu: Turkey Dinner on Halloween. And yes, we lived off of the leftovers (and pizza rolls lol) for the remainder of the week. I had plans of making a casserole or something using the leftover turkey, but I like me some classic turkey sandwiches.
 
I'm looking forward to trying some new recipes this week. There are some great deals at the grocery stores this week so I'm happy to say I have a very short list to make room for stocking up. Here's the plan:
