Homemade Pancakes

Last year some time there was a major deal on Hungry Jack pancake mix at Giant. I can't remember the details, but it made every box less than $.25 after coupons and instant savings. The only was when I got there, the only flavor they had left was Blueberry Wheat. I stocked up on it anyway hoping we'd like it. I figured if not, I'd give some away and then donate the rest (I did end up giving a good amount to my mom). In the end, we did like them and we actually just finished our last box. So began my search for homemade pancakes. I was specifically looking for a recipe that called for ingredients I pretty much always have on hand -- and I found it!
Classic Pancakes
1 3/4 cup flour
2 tablespoons sugar
1 tablespoon baking powder
1/2 tsp salt
1 1/2 cups milk
2 eggs
3 tablespoons oil
Mix dry ingredients together. Whisk together milk, eggs, and oil. Slowly whisk in flour mixture, do not overmix.


Heat griddle on medium heat and spray with nonstick spray. Pour 1/4-1/3 cup batter for each pancake. Flip when you see small bubbles form.
I was lazy when I made this and didn't premix the flour mixture, I think that's why mine didn't rise that much and weren't nearly as fluffy. We absolutely loved the flavor though and I will use this as my go to pancake recipe.

  1. My husband is the cook in our house, but those sound tasty, I'll have to share it with him ;) He made some wheat waffles that were pretty good the other week. The nice thing about waffles is that you can freeze them for a quick reheating later!
