Banana Pancakes


We love us some bananas in the Miller household. You could sit a McDonald's happy meal with burger and fries in front of the child and he could take it or leave it. The second he sees a new bunch of bananas in the bowl on the counter? Bana, Mommy??? Banaaaa??? Seriously, he could eat 2 or 3 or more in a sitting, it's hilarious. Good thing he's never had digestive issues that some kids do with bananas! I found this recipe on Allrecipes and it's definitely in our regular rotation.


Banana Pancakes
1 cup flour
1 tablespoon sugar
2 teaspoons baking powder
1/4 teaspoons salt
1 egg
1 cup milk
2 tablespoons vegetable oil
2 ripe bananas, mashed


Do any of you freeze your overripe bananas? I do, it makes life so much easier. When you need to use them, pop them in the microwave for about 30 seconds. Open the peel and squeeze into the bowl, and there you go. To the bananas, add the egg, milk, and oil and mix well. In a separate bowl, combine the dry ingredients well.


Pour flour mixture into banana mixture, batter will be slightly lumpy. Cook pancakes on a medium hot griddle as usual. Yum!
